Shigefusa and Yoshihide Gyuto

Here are pictures of Shigefusa Kasumi 240mm gyuto custom slim (01 to 0.2mm thinner than stock knife) and Sanjyo-Yoshihide (Yoshikane) Migaki SKD gyuto also custom slim.

Both are nice knives. Shigefusa Swedish steel is easier to sharpen.
Yoshihide SKD is semi SS and do not need so much care compared to carbon steel and is sharp for long period.
